Whether you are following the Daniel Fast in the month of January  or simply love to eat healthy vegan, plant  based, whole foods meals I have a power-packed list of 12 delicious easy vegan recipes for you today.  They are easy to make, delicious, store well and will take only a few minutes out of your schedule, so you can spend the rest of your time concentrating your energy on the matters of bigger importance.

12 Daniel Fast Recipes

These are vegan recipes are easy to make and will satisfy even the most finicky omnivores!

1. Purple Heart Fruit Smoothie

makes about 60 oz.

  • 1.5 cup water
  • 1 pear
  • 1/3 pineapple, cut into chunks
  • 2 oranges, peeled and seeded
  • 2-3 cups watermelon with watermelon rind [yes, you can eat it and it is nutritious!]
  • couple of pitted dates for sweetness

Blend in a high speed blender and enjoy!

2. Vegan Cherry Ice Cream Sandwich

3. Tangerine and Chard Green Smoothie

4. Raw Zucchini Noodles

5. Baked Ravioli (use the dough recipe for Potato Ravioli (below) with any cooked vegetable feeling of your choice, including mashed potatoes, but instead of boiling, bake ravioli at 400 F until golden brown and crunchy)

Believe it or not, I have not even scratched the surface of everything else you can enjoy while fasting. With these kind of foods, it is hard to believe we call it fasting at all. We have been eating this way for the last seven years daily and enjoy enormous benefits as a result–healthier bodies, clearer mind, heightened levels of energy and a disciplined body.
