Fat Free Vegan Quinoa Salad/Main Course (Gluten Free)

Another wonderful hit from the Vegalicious kitchen! It can be served both as the main dish or a salad, and either hot or cold.

I had some precooked quinoa sitting around and Hubby was on the way home from work last night. I had to whip up dinner and had to do it quickly.  Less than 10 minutes into my brainy idea dinner was done! This is one of the main reasons I always have some pre-cooked grain and beans in my refrigerator or the freezer–being prepared makes healthy living a breath!

So, here we go!

Fat Free Vegan Lasagna Recipe

After years of searching (literally), I finally found whole wheat organic lasagna option.  I was so excited when I came across it at the local Whole Foods that I grabbed up a couple of boxes… just in case ;) .  The very next day I whipped up lasagna, but it needed a redo, because, instead of following the instructions on the box and using uncooked lasagna sheets (it is no boil pasta), I decided to give them a couple minute boil.  Well, in the process I got caught up prepping veggies and running around catching up on things… and my lasagna pasta sheets stuck together.  Although I was able to pry some of them apart, and the lasagna itself turned out really good, it was not picture perfect.  This week I made up my mind to actually stick to instructions (a hard thing to do for this girl at times ;) ).

Hubby gave the dish two thumbs up and asked for seconds two days in the row, so it must have passed the pickiest of testers with flying colors. Now it is your turn to tell me what you think.

(This recipes is fat free. Should you choose to add vegan cheese for your topping at the end, beware that it will no longer be so.)

This recipe is V-Camp approved!
