Delicious loaded vegan nachos--healthier, kinder, and more delicious than their animal based alternative. Once you try these, you'll have to institute a limit on how much you can eat, since you won't be able to stop.
Ingredients
one 8 oz. pack of Daiya Cheddar Style Shreds
4 oz. Toffuti "Better Than Cream Cheese" cream cheese
1.5 cups almond milk
1 tbsp apple cider vinegar
½ tsp turmeric
(salt, only if needed, after the dish is fully made)
9 oz. organic corn chips of your choice (I prefer yellow corn)
two 15 oz. cans of your favorite beans
one 15 oz. can low sodium black olives
3-4 medium size tomatoes, diced
½-1 cup chopped green onions
Optional
jalapenos for extra kick
Instructions
place cheese, cream cheese, milk, cider vinegar, and turmeric into a high speed blender
blend until smooth
transfer into a cooking pot
place on high heat
stir continuously until cheese is melted
remove from heat
in a large bowl/plate, layer* chips, beans, olives, tomatoes and cheese
top off with green onions and jalapeno peppers (if you like extra heat)
Notes
*Alternatively, after cheese has been made, mix all ingredients, except for chips, in a dipping bowl, and scoop up this deliciousness with chips. Leftovers then can be easily stored in the fridge for 4+ days.
