cut potatoes into wedges (larger potatoes—cut in half, then each half into 5 wedges; smaller—cut each half into 4 wedges)
place potatoes in a mixing bowl, add salt and seasoning and toss until potatoes are well coated
lay out fries on a baking sheet
bake until golden and crispy (I flip my wedges over half way through with a spatula, to get even golden color)–about 8-10 minutes on each side
serve with ketchup or Fry Sauce (an occasional indulgence due to its fat content), or enjoy these fat free roasted potatoes with Oil Free (low fat) Vegan Ranch dressing
to make Dipping Sauce, whisk Veganaise and ketchup until smooth
