Easy to Make Delicious Semolina Pudding Recipe

Ingredients
  • 2 cups unsweetened almond milk
  • ⅓ c + 1 tbsp semolina flour
  • 1.5 tbsp honey or other liquid sweetener
  • ½ tsp lemon or lime juice
  • 1 tsp vanilla
Garnish and Sauce
  • 1 strawberry for garnish
  • 6 strawberries to blend with 2 tsp honey
Instructions
  1. In a small/medium size pot bring almond milk to boil, then reduce heat to medium immediately
  2. Slowly pour semolina flour into boiling milk, while constantly stirring, so you have a smooth consistency mixture, without clumps
  3. Once the mixture begins to boil and thicken, reduce heat to the lowest setting; keep stirring for another 1-2 minutes, until it looks like porridge (pudding consistency)
  4. Stir in honey, lemon juice and vanilla
  5. Remove from heat and let it sit for 3-5 minutes, while preparing garnish and sauce
  6. Layer semolina pudding and strawberry sauce in your favorite dish, topping off with a strawberry garnish
  7. Enjoy it hot or slightly warm (the best way to have it)
  8. Semolina pudding will keep well refrigerated for 2-3 days. To reheat, add a little milk, and make sure to stir, so that the pudding does not get stuck to the bottom of the pan
Notes
You can use any berries and as much as you want to with this pudding. Sometimes I use frozen berries to cool off semolina faster, since Sprout has no reason to be patient when it.
