I am a soup lover–heart and soul, through and through. I could have soups 3 times a day, cooked or raw, and be a happy camper… although most of the times I would want a slice of warm, straight out of the oven, homemade whole wheat bread to go with my soups, so I have to be strong
. But when I do whip up delicious soups, I indulge.
My Hubby used to be “solids only” kind of guy when we first married. However, even he now succumbed to my soup-loving ways. He still likes them on a thicker side, but that is not a problem, because I LOVE me some soup broth. We make a perfect couple in more than one way–he gets what he wants and I am happy to.
But what makes me happier is that the soups I make are heart healthy–they are made with whole, organic plant ingredients, using no oils of any kind (except with a couple of exceptions, as I will tell you in a moment, but these exceptions do not happen very often). So, I know that when we eat my creations, many of which are my originals, some that have been inspired by soups my Hubby used to like in his pre-vegan days, and some that have been inspired by the memories of my childhood soups, masterfully made by my amazing Mom, our bodies are as happy as our taste buds.
I recently realized that I have complied quiet a collection of my own soup recipes and it is about time I printed them all out for my own use… not to mention that I should really share them with the rest of the world
. I had played with the idea of making an all soup e-book for a couple of months (or longer), but was too busy to commit to it… until a couple of weeks ago, when I was veganizing a broccoli & cheese soup recipe, which used to be one of Hubby’s favorites. And so, the process began.
I am now nearly done with the entire compilation. All recipes are in order, and I am putting finishing touches on the e-book. I even teased some of you on FaceBook page, showing off some of my most recent creations… and some have gotten impatient with me
