New Zealand Spinach Green Smoothie Recipe

by Elena Wilkins on July 7, 2012

Today was Sprout’s first Farmers Market visit.  I wish I could tell you that it was exciting for her, but, alas, at 93 F outside she was knocked out the whole time in the shade of her stroller.  I, on the other hand, was excited to be out.  Although pickings were a bit slim (I miss Washington State farmers markets and our organic farmer), I was able to score a few good thing: bell peppers, blueberries, New Zealand spinach, chard, zucchini, Asian cucumbers and basil. When I got home it was only right to whip up something good from these ingredients.  With temperatures climbing into 103′s F today, a cold drink sounded good, so I made a spinach green smoothie.

New Zealand Spinach Green Smoothie

yields 50 oz.

If you have never seen NZ spinach before, here is what it looks like:

Ingredients

  • 2 cups almond milk (or other plant milk)
  • 1 container blueberries (about 1/2 lb–see image)
  • 1/4 cup hemp seeds
  • 1/4 cup sesame seeds (great source of iron)
  • HUGE handful of NZ spinach
  • 2 oranges, peeled
  • dates or honey for sweetness, if needed

Blend in a high speed blender until smooth and enjoy!

Looks really good, miss E! We freeze all of our smoothie goods first for that extra bit o’ cool.
