Ingredients

  • 1.5 cup soaked cashews
  • 2+ cups water to soak nuts
  • 1.5 cup almond milk
  • 2 medium-small cloves garlic, or 1 tsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp lemon juice
  • 1 tbsp rice vinegar
  • 1 tbsp all purpose seasoning (I use Kirkland organic)
  • 1 tsp salt (or to taste)
  • 2 tbsp dill
  • 3 leaves basil

Preparation

  • Soak cashews in water (pour enough over the nuts to cover them) for a couple of hours
  • Drain the water, rinse, place in a high speed blender
  • Add milk, garlic, onion powder, lemon juice, vinegar, seasoning, and salt
  • Blend until smooth
  • Add dill and basil, run on slower speed to chop herbs, but not make them disappear
  • Makes 2.5 cups

Feel free to adjust ingredients as desired. You can use it as dipping sauce or over any delicious veggie salad.

Would soy milk work instead of almond milk?

      Any milk should work.

    Miss E -
I am allergic to raw cashews (which is a huge bummer for the creamy recipes); however, I use a very similar recipe except I trade raw pumpkin seeds for cashews. Give it a whirl! (ha). As a side note, it’s good for men’s prostrate health. And with less water, it’s good for burritos (in lieu of sour cream).

    Blessings.

Would that make the sauce green?
