Story

A few weeks ago my husband and I just celebrated an amazing anniversary–5 years on a plant based (vegan) diet.  5 years of better health, well-being, 5 years of battles for us to conceive, 5 years of constant research.  Five years! The end to the the last year could not have been better–I have untangled the puzzle to my health problems, we are pregnant, my health is better than ever, and we are stronger than ever.

So, I was thinking of all of the ways we could celebrate.  Giveaways came to mind, of course :) .  And why not?  They are FUN!

Just in time for that Nasoay sent me a couple of coupons to try their new products, which I did, and which I liked so much that I e-mailed them back and said: “How about we host a giveaway for my readers?” It would be a perfect way for me to start celebrating our 5 years of health and a good beginning for a few more delicious giveaways I planned to celebrate.  They graciously agreed.

I will tell you about the giveaway in a moment, but first, let me tell you what I thought about Nasoay products and what you can do with them.

Disclosure: I am normally not a tofu fan. I rarely use tofu products–averaging no more than twice a year, so what you are about to read is as honest of an opinion as you will get.

Review

Mayo

Hubby and I headed off to the local Whole Foods with coupons in hand.  I picked out a couple of things–Nasoya ORGANIC Sprouted Super Firm Tofu and Nasoya Mayo.  When we got home I decided to make a couple of sandwiches and used the mayo.  To me it tasted more like a sandwich spread–it was a far departure from the vegan mayo I normally use.  I have to say that I was not a fan, and I hoped that tofu would be better than that.

Sprouted Tofu

I kept the tofu for when about two weeks ago we had a guest.  Having grown tired of baked desserts (I am not a fan of sugar), I wanted to go light… but delicious for our dessert choices.  So, I have picked Chef AJ’s Sugar Free Chocolate Mousse recipe, but put my twist on it ;) .

Sugar Free Chocolate Mousse Vegalicious Style

Ingredients

  • Recipe as in Chef AJ’s Sugar Free Chocolate Mousse (this time I used Nasoya Tofu U sprouted firm tofu–the best part is that it tasted delicious and was organic; hearing this from someone who does not like tofu in general should make a believer out of you ;) )
  • 1/2-1 cup pistachios, crushed into large chunks
  • 1 cup macadamia nuts, crushed (keep ~5 nuts and grate on a microplane grater to decorate glasses
  • 30+ cherries (I used frozen, 5 per cup)
  • 6 Medjool dates
  • 3 tbsp any plant syrup for glass decoration

Preparation

  • Prepare six glasses, dip edges into syrup then into grated Macadamia nuts
  • Place 2 tbsp of mousse on the bottom of the glass, sprinkle a layer of pistachios
  • Place 2 tbsp of mousse on top, add cherries, cut into ~8 pieces each
  • Place 2 tbsp of mousse on top, add dates, cut into tiny chunks, 1 per glass
  • Place 2 tbsp of mousse on top, spreading whatever is remaining between all servings, sprinkle with pistachios and Macadamia nut chunks

The dessert turned out not only pretty but also delicious–it is fit for royalty!  It will sure impress all of the non-vegan doubters, just don’t tell them what it is made of before serving it.  Wait until they ask for the recipe! ;)

The Sprouted Tofu from Nasoya was a hit! It made the mousse thicker, and it is very nutritious.

With one more coupon left in my wallet, I wondered what else I could get.  Then one morning, on a whim, I remembered how hubby used to love scrambled cheesy eggs–I would make them for him quiet often in our pre-vegan days (no wonder his cholesterol was high!).  A thought crossed my mind to try making vegan cheesy scrambled tofu instead and see what he would think of it.  I had all I needed in the fridge after I got one more brick of Sprouted Tofu.

Cheesy Tofu Scramble

Ingredients

  • 1/2 yellow onion, diced
  • 1/2 bell pepper, chopped into small cubes
  • 1/2 cup filtered water
  • 1/2 lbs Nasoya Sprouted Tofu (half of the package), mashed (image below)
  • 1/2-1 tsp your favorite seasoning
  • sea or Himalayan salt to taste
  • 1/3 cup Dayia Cheese, mozzarella style
  • 2 Roma tomatoes, diced (you can use other tomato variety)

Preparation

  • preheat a skillet on high then reduce to medium
  • add onion and bell pepper (and any other veggie you want to incorporate)
  • when they start sizzling, add a little bit of water to saute them for 1-2 minutes; keep splashing water as needed
  • add mashed tofu, and keep adding water, so it won’t get stuck to the surface (a little at a time);
  • add seasoning and salt

  • cook for about 2 minutes; reduce heat to medium-low
  • add Dayia cheese, stir it in and take the pan off the heat–the cheese will melt
  • enjoy scrambled tofu as is, or make a delicious cheese tortilla with it

Hubby liked the scramble so much that I had to make another serving.  This time I played a little and cut tofu into cubes instead of mashing it. I think I just might have become a tofu convert… but only sprouted tofu :)
