A plant based spin on macaroons. With only 6 simple ingredients, these macaroons will quickly become your family's favorite dessert.
Ingredients
3 cups fine coconut flakes
3 tbsp honey or maple syrup*
1 tbsp freshly squeezed juice*
zest from ½-1 lemon
pinch of salt (about ⅛ tsp)
1.5 tsp vanilla extract
3.5-4 oz dark chocolate bar (70% is perfect for this)
Instructions
preheat oven to 350 F
place all ingredients, except for chocolate, starting with liquid ingredients first, into a high speed blender (like Blendtec with a Twister jar), or a food processor
blend until coconut flakes become nearly ground to flour and macaroons batter sticks together when pressed with fingers (see video)
line a baking sheet with parchment paper
using a tablespoon measure out macaroons (you will end up with 20-22) and shape into your favorite shape
place on the lined baking sheet
bake for 6-8 minutes, or until bottoms of macaroons become golden
remove and place on a cooling rack for 5 minutes
spread a piece of wax paper over a plate, transfer macaroons and place in a freezer for 5-10 minutes (this will yield faster results)
while macaroons are chilling, prepare a double boiler (see video); break chocolate bar into pieces and drop into the top bowl (pan)
stir while chocolate is melting
remove from heat, keeping chocolate over hot water
take macaroons out of the freezer, dip bottom of each into chocolate and place back over wax paper
drizzle extra chocolate on top of macaroons to create a beautiful design
the macaroons should be cold enough for chocolate to harden almost immediately, if not, place the plate in the refrigerator for a few minutes, in order for chocolate to harden
enjoy with a cup of tea or a glass of almond milk
Notes
I like my macaroon with more of flavor contrast, so that they make my taste buds sing, so, instead of 1 tbsp of fresh lemon juice, I use 2, and instead of 3 tbsp honey, I use 4.
