The Best Kale Salad You'll Ever Have with Creamy Thai Dressing

If you thought you knew and loved kale, you will rethink your relationship with it having tasted this kale salad. It is so addictive, I'm afraid you'll overeat.
  • 7-8 large kale leaves, stems removed
  • ½ cup green or red grapes
  • ¼ cup olives
  • ¼ cup raisins
  • ½ juicy apple
  • 1 tbsp lemon juice
  • ⅛ tsp salt + more as desired
  • ⅔ cup cashews
  • ¾ cup almond or another plant milk (add another ¼ cup if you like a thinner dressing)
  • 1 tbsp honey or maple syrup
  • 1.5 tsp red Thai Curry paste (or to taste)
  • ½ tsp toasted sesame oil
  • 1.5 tbsp liquid aminos or soy sauce to taste
  • ½-1 tbsp lemon juice
  1. tare kale into bite size pieces and place into a bowl
  2. add lemon juice and salt and massage until kale is reduced to half of its original volume (about one minute)
  3. cut grapes and olives into halves or quarters; add to kale
  4. add raisins
  5. core apple, cut into small chunks and add to the bowl
  6. toss ingredients
  7. for the dressing: place all ingredients into a blender or a food processor and blend until some cashews are broken down into tiny chunks, while some are completely disintegrated—you will love the crunch
  8. pour over salad, toss and enjoy!
