Sunset Butternut Squash Soup

- 1 lb. butternut squash
- ½ large yellow onion
- 3 cloves garlic
- salt to taste
- 1 Fuji apple
- 1 cup almond milk
- 2 tbsp. coconut cream for garnish (optional)
- ¼ cup of pistachios or sunflower seeds for garnish
- preheat oven to 425 F
- peel and cut squash into chunks
- peel and chop onions
- peel garlic
- place these ingredients into a oven-safe dish, cover with a lid or foil and place into the oven for 1 hour
- after one hour, take out of the oven and place ingredients into a high speed blender
- core and cut apple into 4-6 parts, add to blender
- add 1 cup of almond milk and salt to taste
- blend until smooth
- pour into a bowl and garnish with coconut cream and pistachios
