Sunset Butternut Squash Soup

  • 1 lb. butternut squash
  • ½ large yellow onion
  • 3 cloves garlic
  • salt to taste
  • 1 Fuji apple
  • 1 cup almond milk
  • 2 tbsp. coconut cream for garnish (optional)
  • ¼ cup of pistachios or sunflower seeds for garnish
  1. preheat oven to 425 F
  2. peel and cut squash into chunks
  3. peel and chop onions
  4. peel garlic
  5. place these ingredients into a oven-safe dish, cover with a lid or foil and place into the oven for 1 hour
  6. after one hour, take out of the oven and place ingredients into a high speed blender
  7. core and cut apple into 4-6 parts, add to blender
  8. add 1 cup of almond milk and salt to taste
  9. blend until smooth
  10. pour into a bowl and garnish with coconut cream and pistachios
