place cut batons into a mixing bowl, add salt and spices and toss
if you want crispier fries, you can add a little bit of olive oil to toss, but it is good to skip this to shave off unwanted calories, and to keep your arteries healthier
line two large baking sheets with parchment paper (most of oil will absorb into it)
lay out batons on baking sheets and place into the oven
bake 15-20 mins, until fries begin to brown on the bottoms, then flip over with a spatula and bake another 5+ minutes, or until you achieve that perfect golden-crunchy-munch-inducing perfection
Notes
I do not discard any piece of potato--smaller pieces make for crunchier fries; I also do not soak or peel my potatoes
