Best Vegan Mac and Cheese Recipe

- 16 oz box whole wheat or gluten free pasta
- 1 yellow onion
- ¼ c water to saute onions
- Himalayan or Sea salt to taste
- ⅛-1/4 tsp your favorite, freshly ground pepper
- 8 oz. bag of Daiya vegan Cheddar style cheese shreds
- 4 oz Toffuti cream cheese
- 1.5 tbsp apple cider vinegar
- 1 tbsp yellow mustard
- ½ tsp turmeric
- 2.5 cups almond milk
- cook pasta according to package instructions, salt water lightly; drain cooking water
- add all cheese ingredients into a high speed blender and blend until smooth
- transfer into a small cooking pan and melt on medium heat
- remove from heat and mix with cooked pasta
- chop onions into cubes
- sauté on high heat in water for 4-5 mins, stirring, then reduce heat to medium, and keep frying until golden brown
- when done, add to mixed mac and cheese
