Best Vegan Mac and Cheese Recipe

  • 16 oz box whole wheat or gluten free pasta
  • 1 yellow onion
  • ¼ c water to saute onions
  • Himalayan or Sea salt to taste
  • ⅛-1/4 tsp your favorite, freshly ground pepper
  • 8 oz. bag of Daiya vegan Cheddar style cheese shreds
  • 4 oz Toffuti cream cheese
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • ½ tsp turmeric
  • 2.5 cups almond milk
  1. cook pasta according to package instructions, salt water lightly; drain cooking water
  1. add all cheese ingredients into a high speed blender and blend until smooth
  2. transfer into a small cooking pan and melt on medium heat
  3. remove from heat and mix with cooked pasta
  1. chop onions into cubes
  2. sauté on high heat in water for 4-5 mins, stirring, then reduce heat to medium, and keep frying until golden brown
  3. when done, add to mixed mac and cheese
