Happy 4th of July! What are you grateful for this year?
I asked Hubby about his ideal Independence Day meal–I decided to treat him to one of the best celebrations this year. I know he is already salivating, just thinking about it.
If you are not sure what healthy and delicious goodness to make for this Friday, I am about to share eight mouthwatering vegan 4th of July recipes with you. If you make these dishes, you will be fully satisfied, and you will WOW your non-vegan friends and family.
Drinks
- Lemonade: mix water, liquid sweetener (honey, agave, maple syrup, etc.) and lemon/lime juice until your taste buds are singing, blend them together and you got it!
- Green Smoothies to start our day off right.
Dessert
- Lots of fresh fruit and berries: grapes, watermelon, blueberries, strawberries, pineapple, etc. served up with chocolate fondue
- White, Red and Blue popsicles for Sprout (use blueberries and bananas for the blue layer, strawberries/bananas for the red, and naked bananas for the white layer)
Appetizer
- Fat Free Roasted Fries
Main Course
- Option 1: Vegalicious (Vegan) Veggie Burgers (soy free, can be made gluten free by substituting rice for barley)
- Option 2: Steamed Butternut Squash Dumplings (this recipe is a little more involved)
Salad
- Option 1: my go-to Vegan Potato Salad
- Option 2: watermelon rind slaw (since I will be enjoying watermelon as my dessert, it only makes sense to use all parts of watermelon for most benefit)
While the 4th of July is a special day, with all of these great eats, the goal it to eat just enough, not too much. Food is still supposed to be our fuel, so keep yours as clean as you can.
