What in the world is BEEGAN? Well, some of us, vegans, like me, still, occasionally, eat honey, which comes from bees
, so that makes us occasional beegans. I had previously, in this post, explained why I still consume honey, so, if you are curious you can check there, but I do and make no apologies for it, while I avoid ALL other animal related products not only in food but in clothing, personal care, etc. With that established, let’s move on.
Last night, I do not know what possessed me, perhaps the fact that I needed groceries and our air conditioner decided not to work in the 80 F degree weather, so I took that as an excuse to get out of the house. I was at Whole Foods when I passed by organic Honey Graham crackers… and old memories took a hold of me.
Before my vegan days I used to make a delicious honey cake, but because it called for eggs to make it fluffy enough, I stopped making it altogether. Back then, when I felt especially lazy, I would use honey Graham crackers instead of baking my own honey cakes, to make a cake… but that’s in a moment. So, yesterday, I decided to see if WF carried vegan Graham cracker, which they did not. I turned around, grabbed their organic Honey Graham crackers box and began to read. Although not optimally healthy, it had no other animal products except for honey in it, and no major flags for a “spoil-me-once” food… so I decided I was making my lazy, no bake, no prep, 15-minute wonder honey cake. Yes, literlly–15 minutes to make, 20-30 minutes to wait for it to be just right, and the rest of the time to enjoy it.
